But here is how to make Lentil Soup

Hello Today I'm going to tell you how to make lentil soup. This is a delicous nutritious and nourishing soup for the Winter.

First of all assemble all the ingredients

For 4 people's generous portions.

2 medium sized onions

2 leeks 2 pence or 2cm in diameter,

2 medium sized carrots,
2 generous sticks of celery
1/3 of a small swede, ( grapefruit sized swede)
5 Ounces of Lentils

2 Pints of Cold Chicken stock (I use stock cubs but use fresh if you can)
1 Ounce of Butter,
2 Table Spoons of Vegetable or olive oil, depending on taste

3 rashers of streaky Bacon chopped into half inch pieces

Top and tail the leeks .i.e cut off the bottom spreading green leaves, and slice the top with the root hairs. Split the leeks, down the middle and rinse, thoroughly under running water. Peel the carrots, swede, onion, celery, chop all the vegetables into even sized pieces, about half an inch to a inch thick, or 2.5 cm thick, or so, place to one side.

In a large sauce pan gently melt the butter and oil Don't allow to brown, add the bacon. Soften the bacon on a low heat until the fat is transparent, about 5 minutes, do not allow to brown. Add the chopped vegetables, Stir the vegetables thoroughly so they are coated with oil and butter. Soften gently over the heat for about 10 minutes stir frequently to avoid sticking.

Before you add the lentils, rinse them in cold water, drain them well, and add to the vetegables, with the odd cold chicken stock. Stir very thoroughly. Turn up the heat and bring slowly to the boil. Once the soup, is boiling turn down the heat. to allow the soup to gently boil or simmer. Place lid on now. The lentils must gently boil like this for at least 30 minutes to be thoroughly cooked.

I find 1 hour to 1 and a half hours nicely blends the veg and lentils.

It is very important to stir the soup, frequently to prevent sticking. At the end of the cooking time about 1- 1 and a half hours, add the chopped parsley and some ground pepper to taste. Check the seasoning, you should not need any extra salt.
